Savoury Bacon and Onion Muffin
I've been searching for savoury muffin recipe for so long, but none of them meet my taste so i decide to try this one. I use basic muffin recipe and substitute half of the milk with chicken stock and adding fried bacon and onion. This is perfect for breakfast or dinner(i would prefer rice or noodles and vegetable for lunch )
Ingredients:
2 cup cake flour
2 teaspoon baking powder
115 g unsalted butter, at room temperature
2 tbsp granulated sugar
2 large eggs, at room temperature
½ cup clear chicken stock
½ cup fresh milk
½ teaspoon salt(or more, as u need)
½ large onion, minced
5 pieces bacon, minced
Fresh chopped parsley/ dried parsley for garnish
- Place bacon and onion in a shallow pan, stir fry till bacon crisp and onion soft. Set aside and let it cold.
Sieve cake flour and baking powder and set aside. Cream butter and sugar till light and creamy, add in egg one by one, beat well in each addition.
Mix chicken stock and milk. Add half of flour to the butter mixture then pour in chicken stock , add the rest of flour and stir until well mixed. Fold in bacon and onion. Spoon to paper cup and sprinkle parsley. Bake at 180 degrees C for 20-25 mins.
