Spicy Chicken in Red

Here is my mom version of Ayam masak merah. I never pass over this kind of delicious Indonesian dish since last year.


300 g chicken fillet
5 cloves shallot
3 cloves garlic
1 cm ginger
2 big red chili
8 small red chili (or as u like)
1 tsp coriander powder
3 lime leaves
1 stalk lemon grass
1 ripe tomato, diced

- Marinate chicken with coriander powder and salt for 15 minutes and then deep fry until brown. Set aside. Blend all the ingredients, except lime leaves and tomato. Heat 1 tbsp oil, saute blended ingredients until fragrant, add lime leaves and 2 cups of water. Simmer for 1 min. Add chicken and diced tomato, cover and simmer over low fire until gravy almost dry.
