Meat Filled Omelet

This recipe also adapted from Creative Chinese Home Dishes by Angela Cheng


4 eggs beaten
80 g minced beef
1 tbsp minced onion
1 stalk scallion
salt and pepper

-Heat 1 tbsp oil and saute minced onion till fragrant, add beef and stir quickly, season with salt and pepper. Remove from heat and sprinkle with chopped scallion.
Heat another tbsp of oil over small fire, pour half of the egg and add beef on top and pour the rest of egg. cover until done.
