Salmon Fried Rice

Good solution for lazy winter evening, serve it with a bowl of warm meatball soup.

Ingredients:
2 bowl cold white rice
1 egg
1 bowl shredded cabbage
1 slice salmon, cooked and mashed
1 tbsp chopped onion
1 tsp chopped garlic
1 red chili, chopped
1 tbsp veg oil
1 tbsp soy sauce and fish sauce
salt, pepper, msg(optional)

- Heat oil in a wok, add onion and garlic, stir for few minutes until fragrant. Break in egg and stir quickly till it lightly scrambled, add salmon and cabbage, give it another stir. Turn the heat down then add rice, use wooden spoon to break it apart. When the rice is heated through, season with soy sauce, salt, pepper. Serve hot.

Spaghetti With Homemade Meat Sauce

What would you do if you have a bag of tomatoes sitting beautifully in your fridge for a week?

I turned mine into this delicious meat sauce using this easy recipe.


And serve it over spaghetti, sprinkled with freshly grated parmigiano.

Fried Rice With XO Sauce


It is Sunday and i am lazy, hungry and crave for something nice yet easy. Digging my fridge, i found a jar of XO sauce, some seafood and leftover rice. Yay...something delicious ready in less than 10 minutes.

Ingredients:
2 bowl leftover rice
3 tbsp chopped onion
3 tbsp XO sauce
4 large prawn, chopped
1 egg, lightly beaten
1 tbsp soy sauce
2 red chili, chopped
bunch of chinese chives
salt to taste

- Heat few drops oil, scramble egg and set aside. Saute onion until fragrant, add chopped chili, prawn and rice. Stir for few minutes, add in scrambled egg, XO sauce and soy sauce. Keep stirring for another 3-4 minutes. Taste with salt and add chopped chives. Serve while it is hot.

* Use less oil is better since XO sauce is already oily.

Spaghetti With Mushroom and Sausage


Mushrooms are one of my favorite food. I love to buy any kind of mushroom when i saw the fresh one, though sometimes i really don't know what to do with it.
Few days ago, a friend take me to Italian restaurant and their fettucine alfredo was soooo good!! I notice that i never try to make alfredo sauce by myself, so today i attempted to try it. And in order not to waste my fresh shitake mushroom that already sitting in my fridge for almost 2 weeks, i add it to the sauce along with chicken sausage and it tasted yummy(not as good as the restaurant's one for sure hehee)

Sauce Ingredients:

110 g cream cheese
50 g butter
1/3 cup heavy cream
1 tsp garlic granules
1 tsp parsley flake
1/2 cup grated parmesan cheese
4 fresh shitake mushroom, slice
1 chicken sausage, slice

-Melt butter in a sauce pan, add sliced mushroom and sausage. Pour cream, add garlic granules and simmer for 3 minutes.
Remove from heat, add cheese and stir quickly. Pour sauce over cooked spaghetti and sprinkle with parsley flakes.

Chinese Style Fried Rice


I learn this fried rice from a chinese takeaway restaurant nearby. They used chinese dried sausage (臘腸 / la chang) too cook this fried rice. It is real simple yet awfully delicious, perfect solution for lazy winter days.

Ingredients:
2 bowl white rice (leftover is great)
2 egg, lightly beaten
2 dried sausage, minced
2 red chili, minced
3 tbsp chopped onion
1 scallion
2 tbsp soy sauce
salt and pepper

- Heat a tbsp oil, saute onion until fragrant. Add chili and sausage stir for few minutes, pour in beaten egg and stir quickly. Add in rice, taste with soy sauce, salt and pepper. Turn off heat and sprinkle with chopped scallion.

Quick Spaghetti With Bockwurst


I have either spaghetti or dry noodles for lunch/dinner at least once in a week. I'm a big fan of it. Most of time, i buy it outside since i'm not so good in cooking both spaghetti or noodles.
What about noodle soup? Honestly, i hardly eat it!! In the beginning it's very delicious(especially beef noodle soup) but after 5 minutes passed, it will turn to be something like "worm swam in the water" and it is so yuck.
Back to the spaghetti, here's my quick and easy version recipe.

Ingredients:
250 g spaghetti, cook as directed
2 bockwurst, sliced
3 bacon, diced
3 cloves garlic, minced
1 tsp mixed herbal seasoning
1 tsp chili flake
2 tbsp toasted pine nut
2 tbsp olive oil
salt, as required

- Heat olive oil, saute garlic over low fire till fragrant, add in bacon and sliced bockwurst, stir till bacon dry. Add spaghetti, season with salt, chili flake and mixed herbal, mix well and sprinkle with pine nut. Serve immediately. Best goes with cream soup.

Rotini and Veggies Carbonara


This is consequence for being such forgetful person like me. Shop for carbonara stuffs, and out without its main ingredients, a pack of SPAGHETTI. Yeahh...i'm physically 26 but brainly, 75 something.
Since i have a pack of rotini, then i don't need to rush to the store again, and here is the result, yummylicious

Ingredients:
1 cup rotini
3/4 cup cream
2 egg yolk
1/2 cup grated parmesan cheese
1/2 cup chopped carrot
1/2 cup chopped broccoli
4 pieces bacon, chopped
2 tbsp bacon drip

- Cook pasta with salt and olive oil till done, drain and set aside. Blanch broccoli and carrot with boiling water for few minutes.
Fry chopped bacon until dry and crisp, mix egg yolk with grated parmesan cheese, cream and bacon drip. Return pasta and veggies to the pan, toss with egg yolk mixture and fried bacon, stir quickly and turn off the heat. Sprinkle more grated parmesan cheese and serve hot

Fried Silver Needle Noodle


After reading Florence's blog about her silver needle noodle, i was so tempted to make my own noodle. It looks so easy and it's only few days ago when i saw the main ingredients(wheat starch) in the organic shop and it gone now.
Everything seems to be in the same way, it is just stand there for days or months when i don't need it and it gone by the time i need it. I have no choice but get the ready made one.

Ingredients:

200 g silver needle noodle
60 g prawn
50 g shredded chicken/pork
5 dried shitake mushroom, soaked and sliced
1/2 onion, sliced
1/2 cup shredded carrot
2 tbsp fish sauce
1 tbsp light soy sauce
Green vegetable as u need
salt, sugar and pepper to taste

-Marinate chicken/pork with soy sauce, cornstarch and sesame oil for 15 mins. Heat 1 tbsp oil and stir fry chicken/pork for 1 minute, set aside. Heat another tbsp oil and saute onion till fragrant, add mushroom and all the rest ingredients. Season with fish sauce, light soy sauce, salt and pepper. Serve hot

Indonesian Style Chicken Porridge


I used to think that cooking an Indonesian food is very difficult and complicated. The fact, it was very very easy, and look..i made it.
I don't use an instant paste this time. And this was the best breakfast i've ever had in last 7 years.

Ingredients:

1 boneless chicken breast
3 candle nut
1 inch baby ginger
4 cloves shallot
2 cloves garlic
1/2 tsp turmeric powder
1/2 tsp coriander powder
1 stalk lemon grass-bruised

- Grind all the ingredients, except chicken and lemon grass.
Grill chicken over high heat until brown then shred it. Heat 1 tbsp oil and saute all the ingredients until fragrant, add water and simmer for few minutes, add chicken and continue cooking until done. Pour over white porridge and sprinkle with chopped celery, spring onion and shallot flake. So yumm....

Spaghetti Carbonara and things that makes me smile


Started with things that makes me smile
- My new kitchen utensils, oven, non-stick pan, small hand mixer and bakery tools.
- A shop that sells bakery tools and ingredients and it is located only couple blocks away from my appt and the price is 30% cheaper compared to the supermarket that i used to shopped in
- Message from my dear J, he told me that he's stuck on the traffic caused by "si komo lewat"
- When i told him i'm going to try spaghetti recipe, he said "i would rather have fried instant noodle than spaghetti"

I've read few articles about spaghetti carbonara, Cream is not used in Italian recipes, but is used in the US, France and England. They use mushroom and peas as well for color. Most of these preparations have more sauce than the Italian versions, and have more in common with a cream sauce such as that used for fettuccine.
I'm trying the Italian version without cream and adding broccoli instead of mushroom, it is a bit dry but taste still "not bad for me"(i eat anything that can be eaten :P) and this how i do it,
- Cook spaghetti with salt and olive oil, drain. Blanch broccoli with hot water for few minutes
Fry chopped bacon until dry and crisp, mix 2 egg yolk with grated parmesan cheese, 2 tbsp fresh milk and 2 tbsp bacon drip. Return spaghetti and broccoli to the pan, add egg yolk mixture and fried bacon, stir quickly and turn off the heat. Sprinkle more grated parmesan cheese and serve hot

Kimchi Fried Rice


I love the sour and spicy flavor of this Korean preserved vegetable.
For me, it best goes with beef, like stir fried kimchi with beef, kimchi beef hotpot, or kimchi fried rice. And this is my own version of kimchi fried rice.

Ingredients:

1 bowl cooked rice
1/2 bowl sliced beef
3 tbsp chopped kimchi
1 egg, scrambled
1 tbsp sesame oil
1 tbsp minced onion
1 tsp corn starch
1 stalk spring onion, sliced
mixed vegetable (corn, carrot, snow peas)

- Marinate beef with sesame oil and cornstarch for 15 mins, stir fried quickly. Set aside
Saute minced onion, add mixed vegetable and kimchi stir for few minutes, add rice and scramble egg.
Last, add beef and sprinkle with spring onion.

Fried Rice Noodle With XO Sauce



I awake early at 6 something today, lying on bed without fall asleep again until 7.30. It is Sunday and i heard heavy rain through the balcony. I really hate rainy weekend. Without eat anything for breakfast(except a cup of coffee), i do my laundry and sitting in front of my computer.
Around 11 i feel starving and craving for a bowl(or more) spicy food, but there's nothing inside my fridge except raw meat and ice cream. Opened cabinet, sitting in the corner i saw a jar of XO sauce that i bought from Chinatrust hotel 4 months ago. I think about fried instant noodle with XO sauce, but no instant noodle left today :(( (if only i got instant noodle then i will not cook this...hehee). Ahaa...lucky me, opened next cabinet i found a pack of rice noodle, my sister used to bring dried food to the temple for praying.

Ingredients:

100 g rice noodle, blanched with hot water to soften
3 tbsp shredded pork/chicken
3 dried shitake mushroom, soak to soften and slice
1 egg, scrambled
1 tbsp shredded carrot
2 cloves shallot, minced
1 clove garlic, minced
3 tbsp XO sauce
1 tbsp soy sauce
1 tbsp extra soy sauce for marinating
1 tsp cornstarch
leek, as u need
red chili if u like

-Marinate meat with soy sauce and corn starch add few drops oil.
Stir fry minced shallot and garlic add mushroom and meat, stir quickly
Add XO sauce, stir until well mixed, add rice noodle and scramble egg, season with 1 tbsp of soy sauce, stir for few minutes. Last, add in leek, stir and remove from heat, garnish with sliced red chili
